Life’s Just Too Darn Short Not To Eat Crushed Mint Oreo Cookie Topped Cupcakes!

Seriously?  Are these for real?  Do you dare?  Yes, yes, and yes!  About 3 years ago, when my brother was struck with tragedy, it made me think a lot about life.  I decided that life was just too darn short not to eat Oreo’s.  So, when I came across these bad boys in the grocery store, I wasn’t about to let them go!  

For my husband’s birthday celebration this year, I ordered 50 specialty cupcakes from a bakery.  I was able to choose a variety of different flavors and toppings.  The topping of the month was Oreo Cookie.  So, of course, I had to order some.  When I arrived to pick up my order that day, I didn’t take the time to count the cupcakes to make sure that they were all there!  Duh!  I set out to drop the cupcakes off at the party location, and only then did I realize that I was missing six cupcakes.  I noticed that among the other 44, there weren’t any Oreo topped cupcakes.  I called the shop, and I went back to pick them up.  But instead of taking them back to the location, I brought them home!  Oh, boy.  I know what you’re thinking.  I’d be stuck eating them, right?  You got it!  And let me tell you, they were out of this world.  I did give some away before managing to eat one or two.  Okay, if I’m being totally honest, at least two! 

Well, this fabulousness, made me have to take a stab at these as well, and when I saw mint flavored Oreo Cookies in the store, I thought St. Patrick’s day would be just the excuse to do so!  And so here lies my attempt at them!  

There’s no need to make the ingredients from scratch unless you need them Gluten free or free from other things.  Personally, I shouldn’t be eating any of this due to my own food sensitivities, but sometimes you just have to give in! 

Okay, let the fun begin!

Ingredients
  1. 1 box Devil's Food Cake Mix
  2. 1-2 cans white frosting
  3. 1/2 - 1 package crushed Mint Oreo Cookies
Instructions
  1. Replace water with buttermilk to give this cake mix a thicker, more homemade feel to them. If you don't have buttermilk in your home (like most of us) you can make your own. 3/4 cup of milk and add white vinegar to round it up to a cup. Let it sit for at least 5 minutes and then add to the mix. Use a mixer as usual.
  2. 4 eggs (in place of what is called for on the box)
Notes
  1. Bake cupcakes 12-20 minutes - insert toothpick in the center and make sure it comes out clean before removing from the oven. Cool.

While your cupcakes are cooling, add at least half of the bag of cookies or more to a Ziploc bag, depending on how generous you are with them.  Take a rolling pin to them and start crushing.  Crush to the desired consistency.

You can make your own frosting, but why bother with these.  Any canned white frosting will do!  Use a hardy amount of frosting per cupcake (besides your thighs, this will give the cookies something to stick too!)  I’m probably not selling these very well with comments like that, huh?  Oops!

Scatter the crushed cookies onto a plate, now dip and press the cupcake onto the cookies.  TIP:  I would add the Oreo’s the day you plan to eat them or bring them to an event.  I made mine the day before St. Patty’s day and the cookies were a little moist as opposed to crunchy.  I like them crunchy!!!

Dawn and I have been known to make gluten free, dairy free, soy free, and butter free goodies.  But these aren’t free of nothin’!  They’re only free to a good home that wants to take them off of your hands after you’ve decided that you just can’t have them around or else you won’t be wearing those skinny jeans anymore!  However, if you’ve got some good stretch to those jeans, you may want to reconsider.  I did bring these to a friend’s party, but kept a couple for our house.
