Fire up the grill, it’s salad season!

Why do we eat salad in the summer?  Is it because it’s cold and refreshing?  Or is it something about all those wonderful fresh veggies that are in season that we love?  Could it be that eating comfort foods like Mac n’ Cheese and Chili just just don’t do a body good when you’re laying on the beach?  I’m not sure, but for some reason salad just doesn’t appeal to me as much during those cold winter months as it does in the summer.  

One of our absolute favorite salads that we love to make is a knock off from a local restaurant here in San Diego – Sammy’s Wood Fire Pizza.   It’s one of those salads that you just have to have.  How I combat that feeling is that I just learned how to make it myself.   It’s made almost the same, but we’ve added our own special twist – surprised?  Didn’t think so!

After having my second child, Dawn and her husband brought over this salad for me and my family to enjoy.  I don’t make it like Dawn does, as she makes her’s with candied walnuts, and I do not.  But you can buy them candied already.  Or you can candy them too.  See a follow up post for the instructions on how she makes hers.

Ingredients
  1. (4) Chicken breast
  2. (1) Container Organic Spring Salad Mix
  3. (4) tsp Gorgonzola or Blue Cheese
  4. Handful Pecans or Walnuts
  5. (5) Strawberries or a handful of Craisins
  6. Balsamic Vinegarette (See post on how to make mine)
Instructions

  2. Marinate the chicken in the balsamic dressing and use a fork to prick the chicken to allow for faster marinating time.
  3. While it's marinating, prepare your salad - I use already made Organic Spring Salad Mix. It's easier. Choose the amount you need and add to a big bowl. Add the cheese, sliced strawberries, nuts and top with sliced chicken.
  4. Drizzle with balsamic vinegarette and toss your salad for even distribution of the dressing. This also helps the cheese to spread a bit.
  5. ENJOY!
Notes
  1. As you can see I have added different ingredient choices. I make this salad many different ways due to the ingredients I have on hand. You can't go wrong! Just make sure you use the balsamic dressing, it's devine!!!
