Ingredients
  1. 1 (3 lb.) boneless pork shoulder
  2. 1 medium onion, chopped
  3. 1/2 cup chicken broth
  4. 2 cups of your favorite barbecue sauce
  5. 2 tablespoons mustard
  6. 2 tablespoons honey
  7. Salt and pepper
  8. 10 sub rolls
  9. Oil olive, butter, or margarine
  10. 1 12 oz bag broccoli slaw (found in the bagged salad area of your grocery store)
  11. 1/4 cup mayonnaise
  12. 1 Tablespoon red wine vinegar
Instructions
  1. Chop onion and place in the bottom of your slow cooker. Add pork shoulder and pour broth over the top. Cover and cook on low until the meat is almost falling apart, approximately 8 hours.
  2. Keep meat in your crock pot and shred with a fork, removing any fat, skin, gristle, and any other unappetizing parts as you go.
  3. Add barbecue sauce, mustard, honey and salt and pepper to taste. Stir well and cook for an addition 1 hour on low.
  4. Mix broccoli slaw, mayonnaise, and vinegar in bowl.
  5. Heat pan or griddle over medium high heat and grease with a splash of olive oil or a pat of butter or margarine. Slice sub rolls in half and add to pan cut side down. Toast until golden brown.
  6. Add pork and slaw to toasted rolls and enjoy!
Notes
  1. This recipe is easy to make dairy free. Simply use dairy free barbecue sauce and sub rolls and use olive oil instead of butter to toast bread.
